Mia cut the following recipe out of the newspaper for me and I tried it the other night. It was delicious. The jalapeno, honey, butter will now be my standard when I make this sort of dessert. I've also included my favorite berry crumble recipe which would also be great with the butter.
Blackberry Crumble with Jalapeno & Honey Butter
Makes 4 portions
250g Blackberries (about 2 cups) 2 cups didn't look like enough so I added a small unpeeled apple.
50g White sugar (a very scant 1/4 cup)
100g Flour (a scant 1/2 cup)
170g Unsalted Butter (70g (scant 1/3 c) for crumble / 100g (between 1/3 & 1/2 C) for butter)
50g Brown sugar (a very scant 1/4 cup)
50g Rolled oats (a very scant 1/4 cup)
1 small Jalapeno pepper, deseeded and finely diced
30ml Honey (about 2 T)
Method:
- Pre-heat oven to 180°C/350°F
- In a large bowl, mix together flour & brown sugar, rub in 70g of the butter until mixture resembles coarse bread crumbs then stir in the rolled oats.
- Divide then blackberries between 4 ramekin dishes (or one large dish) and sprinkle the white sugar over top.
- Cover the berries with the crumble mixture and pat gently, not too hard!
- Place on baking sheet and bake for 25 – 30 minutes (longer if a single large one)
- Meanwhile, place the honey in a small saucepan, add the jalapeno pepper and bring to a simmer for just 2 minutes, remove from heat and allow to cool before stirring into the 100g of soft NOT MELTED butter.
- When the crumbles come out of the oven allow to cool for a few minutes and serve with the jalapeno honey butter on the side.
Or try this Crumble I think it would be even better.
Fruit and Berry crumble
2 ¼ lb fruit berries, peaches, apples whatever
1/3 C. sugar
2 T. cornstarch
2 T lemon juice
My additions
add 1/8 to ¼ C. chopped crystallized ginger
Topping
¾ C. unsalted butter (I use salted)
½ C. brown sugar (white is okay too)
1 C. flour
½ C. rolled oats (not instant oatmeal)
¼ Tsp salt
½ C. nuts/ seeds (I add more, adding peppitas, sunflower seeds, walnuts etc.
Mix fruit, sugar, cornstarch, lemon juice. Put in dish you plan to bake the crumble in.
Mix topping put on top of fruit. Bake 350. For 30 – 40 minutes, or until bubbly.

Beaverton Visit
We had a wonderful visit with Jackson, Jessica and Thaddeus in Beaverton. Jackson is full of personality and cute, cute, cute. He is Mr. Busy and his vocabulary grows daily. He is quickly becoming a little boy.

THe Great Honolulu Photo Expo
In May 16 friends agreed to be part of the first Honolulu Photo Expo. They were given the task of photographing 8 locations. As many photos as they want, as often as they wish. Then they each chose one and had it enlarged to an 8 X 10. We gathered at the Laird's for a potluck and showing. Not everyone could attend and not every one had photos for each location. We added an 'Other' category for a few photos from people who either didn't get to the locations or just had something they wanted to share. It was a huge success and plans are a foot for another go around. Here are some photos of the photos.
